I am interested in getting the Curt C11499 Hitch and Thule part # ETTHT2C-1 combination for my 2013 G37X Sedan. Would this combination give me the needed clearance to fold the Thule T2 Classic up when not in use?

The CurtTrailer Hitch, part # C11499 will work great on your 2013 Infiniti G37. When installed it has a distance of 2-1/2 inches from the center of the hitch pin hole to the rear edge of the bumper.
The Thule T2 Classic 2 Bike Rack, part # TH9045 that you asked about has a distance of 3-1/2 inches from the center of the hitch pin hole to the closest part of the carrier so I would be cautious with recommending it for you. I do have a solution though.
I recommend the Thule T2 Pro 2 Bike Platform Rack, part # TH23JV. This is a very nice bike carrier that has lots of easy-to-use features. The distance from the center of the hitch pin hole to the closest part of the bike carrier is 5 inches when folded so there is plenty of clearance from the back of your G37. This bike carrier has a 100-lb weight capacity for 2 bikes and has locks included to secure the bikes to the carrier and also to secure the carrier to the trailer hitch. You will also need the stabilizer strap # 18050.
