Question:
Is there a way to install a 7 way connector to the power wire of this jack so that it can just be plugged into our trucks 7 way trailer connect for power? Thank you

Technically, you could attach an electric jack, such as # BD500199, power wire to the 12 volt circuit on a 7-Way trailer side connector. If looking at the back of the 7-Way where the wires attach it is in the 1 o'clock position.
But the vehicle side trailer wiring may not be rated high enough to power the jack properly (30 amps). If other things on the trailer are also drawing power from the 12 volt circuit then it could overload it. You would also want to keep the truck running so the alternator can maintain a charge to the vehicle battery.
Also in some cases it is possible that the draw of the jack could overload the wiring to the 12 volt circuit on the 7-Way and cause it to overheat, possibly melt.
I recommend a trailer-mounted battery. You could even use a battery box with a solar panel, # TLA7708RS, to house the battery and charge it.
