Hey Matthew! The Thule Hullavator Pro # TH898 is compatible with your Rhino-Rack Vortex Aero Crossbars. However, you will need to measure to make sure you have enough clearance to use the Hullavator.
Your crossbars need to extend 4"-8" beyond the feet for proper clearance. See the attached diagram. If you meet that requirement you're all set. If not, you will need to get longer crossbars like the 59" Rhino-Rack Sportz # RR75AG.

There is no secret to getting the screw out, but since it's stripped it's going to be a lot harder. The racks you see have a different weight capacity depending on if your 2017 Ford Fiesta is a 5-door hatchback or 4-door sedan.
