What is your experience using this bike rack with full-fendered e-bikes?

The RockyMounts SplitRail LS 2 Bike Platform Rack # RKY11404 that you referenced is a great bike rack but it's not ideal for a full fendered bike like your e-bike due to how it attaches to the bikes by grabbing the front tire which is where your fender would be.
A much better option would be the Thule EasyFold XT part # TH903202 which uses a frame clamp instead that was designed for the often-times unique shape of e-bike frames. It also comes with a ramp that pulls out which makes loading the heavier e-bikes easier. Check out the review video link I attached for this rack for more info on this as well.
