I have attached for you below the proper procedures that need to be completed in order to flat-tow your 2018 GMC Acadia per the owner's manual.

1) Position the vehicle that will be towed and secure it to the towing vehicle.
2) Remove the shift lever boot by pulling up on the rear of the trim plate.
3) Use a small screwdriver or tool to press and hold the manual release button on the rear right.
4) Put the vehicle in N (Neutral).

The vehicle's ignition will need to be in the ACC/Accessory position and it will remain that way so long as it is in tow mode. I cannot speak specifically for the Acadia but generally speaking the miles will not show on the odometer while in tow mode. In regards to the pin under the shift boot, this is usually to allow the vehicle to be put in neutral while the key is off but you can confirm this by reaching out to your local dealer as they would have more specific information on the above.
