There are two accepted ways of wiring a 6-way trailer connector. One uses the center pin as the 12-volt power accessory feed, the other uses the center pin for the brake output circuit. It sounds as if your trailer and adapter are wired differently, locking up the brakes as soon as the trailer is plugged in.
The 7 to 6-way adapter, part # 47549 comes with the center pin wired up as the 12-volt lead, but it can easily be taken apart and rewired. See the picture to the right for typical wiring of a 6-way connector.
