I have a 2002 Ford F-250, 7.3 engine. It has approx. 174,000 miles on it. I want better fuel economy, and wondered how many miles per gallon of improvement would be expected. On average, I run about 75 mph. No racing, occasional hauling of bumper-pull horse trailer.

The two Edge products you referenced, parts # EP84030 and # EP85100, are fundamentally different.
The Edge Diesel Evolution CTS3 Programmer # EP96TR (or the # EP76TR for California residents) is both a monitor that displays engine parameters sent through the OBD-II port, and also a performance tuner that can increase your horsepower and torque by altering your engine's tune. This unit is a fit for your 2002 F-250 Powerstroke. The other unit # EP84030 is only a display - it does not re-tune any engine settings.
The way these devices can help increase your fuel economy is by providing you with feedback about your driving habits. The Driving Coach function will tell you how your driving habits affect your fuel economy and overall engine performance. They do not give you mileage improvement by re-tuning your engine in any way. That's why Edge uses the term 'coach' to describe the function. Therefore it is not possible to give you a specific potential mileage improvement.
