What 4 pin mounting plug do you recommend for this hitch? I see it has that plate but I couldnt find any specific information on what to use.

The correct 4-way wiring harness for your 2019 Toyota Sienna will depend on the model you have, specifically if it is the SE or not. You'll need one of these two:
- All Models Except SE: T-Connector Vehicle Wiring Harness # C56261
- SE Only: T-Connector Vehicle Wiring Harness # C56106
These will go well with your Draw-Tite Hitch # 75237, but the tab for mounting the 4-way won't actually be used because both harnesses store inside your Sienna's cargo area.
