Vehicles and the hitches designed to fit them may offer different capacities. And availability of a hitch for any given vehicle does not necessarily mean that vehicle can tow a trailer; hitches may be offered simply to enable use of bike racks and other hitch-mount accessories.
The 1-1/4-inch Curt hitch # C12110 that you referenced is a correct fit for your 2004 Toyota Solara and comes complete with required hardware for bolt-on installation. You will need the # C45522 ball mount, hitch pin and clip # F-4. This Class II hitch itself is rated for a maximum towing capacity of 3500-lbs and a maximum tongue weight of 300-lbs. I have linked the hitch installation instructions for your reference.
Please note that my research did not confirm any official towing capacity for your vehicle approved by Toyota. You can check your owners manual (or provide the car VIN to your local dealership) to confirm that the Solara can be used for towing and what its tow rating may be. I suggest you do this before attempting any towing. Towing a trailer will place additional burdens on the tow vehicle engine, transmission and brakes. The manufacturer of a vehicle gets the final say on whether it is suitable for such use.
If your Solara can tow your 2000-lb pop-up camper you will also need a trailer wiring harness to connect the vehicle lights to those on your camper. You could use a kit such as # C59236 from Curt. You will also need a hitch ball of the correct size for your trailer. I provided a link to our main page for these.
I have linked for your review two articles that cover towing basics.
