Hi. Im wondering if this camera would be able to connect to a 2012 jeep wrangler as the licence plate is off to the side rather than the middle like other vehicles? I dont necessarily need it for the hitch part, though that is a great feature. I was hoping to install it behind the spare tire.

I have done some research online for your 2012 Jeep Wrangler. As you stated, the license plate holder on your Jeep is located to the side under the left tail light. The Hopkins Smart Hitch Backup Camera, part # HM50002, is designed to be attached to the license plate location. You would remove your license plate and the bracket, and then attach the included bracket with the camera and sensors with the hardware that is included.
I have also attached a link to another camera system, the Swift Hitch Trailer Hitch Aligner Portable Wireless Camera System with Night Vision, part # 04928. This system features a magnetic base on the camera that can be mounted and removed when you do not plan to use it. It is a wireless system, so wiring is not an issue, and comes with cables that hook up to both the camera and the receiver when charging is needed. I have attached a couple of links to some videos about this wireless system.
This system is designed to use the 7-way connector on the rear of your Jeep. If you do not have a towing package installed, you will want to hard wire the camera system to your Wrangler reverse lights.
