EcoHitch does indeed offer a 2 inch hitch for a 2016 Kia Soul, as part # 306-X7326.
If you click the provided link, you can see a video showing the hitch being installed on a 2017 Kia Soul. The procedure shown in the video would be the same for your 2016 model.
