Is there a 2” trailer hitch for a 2012 Hyundai Elantra wagon or only the 1.25”? I’ll be using the hitch for bike racks and I’ve heard the 2” is more stable?

The only trailer hitch that fits your 2012 Hyundai Elantra Touring Wagon is a Class I, 1-1/4 inch hitch, though you don't have to worry about it not being stable, as it is just as stable as the larger 2 inch hitch. The correct hitch fit for your '12 Elantra Touring Wagon is the following:
- Curt Trailer Hitch Receiver # C11471
Just keep in mind that a Class I hitch does require a Class I-compatible bike rack. And since your Elantra is fairly low to the ground, I highly recommend either a hanging rack a platform rack with a significant rise.
The largest rise for a platform rack is the 8 inches from the Saris Freedom # SA4412B. Otherwise, for a hanging rack, the best overall value in regards to quality and price is from Kuat, the Kuat Beta Bike Rack for 2 Bikes # B202-114.
