I have a 2019 Subaru Outback and purchased a Roam Adventure Co. Vagabond XL RTT. I’m good with the weight of everything the rails just need to support 160lb, but where I’m getting confused is which bars to get. The RTT manufacturer recommends a 60” center to center spacing for the crossbars. Which mountain hardware / bars would I need for my car to accommodate this?

A 60 inch crossbar spread is very wide and won't be possible on your 2019 Subaru Outback Wagon with any roof rack out there. That wide of a spread is much wider than basically anything you'll find with exception of maybe some truck bed rack options. The standard spread for your vehicle is right at 41 inches which is a compatible figure for basically all roof top tents that were intended for vehicle applications.
For a roof rack the Thule Wingbar Evo part # TH711220, # TH710601, # TH186047 is a really great option with the 41 inch crossbar spread I mentioned and the weight capacity needed as well.
