I am looking for a 7 pin wiring harness for hooking up a 5th wheel trailer to my 2021 Ford F150. Can you tell me which product I need or what to use for an adapter to make any of the harnesses work for that pickup model? Please and thank you.

For your 2021 Ford F-150, I'd recommend the Curt # C57008 which includes the hardware for the Ford aluminum bed. The harness plugs inline at the connection where the factory harness plugs into the 7-way on the rear bumper as shown in the linked installation video.
The # 54701-009 harness you'd looked at is a fit for Super Duty models up through 2020, and isn't a confirmed fit for your truck.
