I need a tray hitch to hold an ebike. The bike has fenders and a rack on back. While most of our traveling will just be the two of us, I wanted to consider 2+2 options if possible. Can you make suggestions for 1 best options for just 2 bikes, and 2 best options if I wanted to haul 2 bikes with the ability to extend to 4. Thanks.

I can definitely help you out with that! Your best option for a 2-bike carrier is the Saris Freedom 2 Bike Platform Rack for Fat Bikes - 1-1/4" and 2" Hitches - Frame Mount # SA4412B-FB. This secures the bike by the frame, so it will not interfere with fenders or racks/baskets. The tire trays can fit tires up to 5" wide, so it works well with fat bikes. It also has a weight capacity of 60lbs per bike; if your bike weighs more than 60lbs then you can remove the bike's battery when transporting in order to reduce the weight.
For a bike rack that can be converted from 2-bike to 4-bike your best option is the Swagman Quad 2+2 Bike Rack for 4 Bikes - 2" Hitches - Frame Mount # S64FR. This carrier secures the bikes by using a padded hook that ratchets down onto the bike frame. The weight capacity is 45lbs per bike which is common among 4-bike carriers like this. The tire trays can hold tires up to 3" wide; if you have a fat bike then you may want to get the Swagman Fat Bike Tire Wheel Adapter for XTC 2/XTC - 2 Tires # S64674 which allows up to 5" wide tires.
