Wondering what’s recommended when I latching the coupler. I see this as being difficult to hold the lever up and jack at the same time

The Bulldog # BDGN240200 is perfect for this application, as it's self latching. Lower the coupler onto the gooseneck ball and the coupler will self latch once it hits bottom on the ball. To un-latch and hold the coupler open, I'd recommend using a bungee cord like # 348509, put one hook in the hole on the latch handle and the other hook to a tie-down in the bed or a stake pocket.
