I need to purchase a hitch and harness for my 2010 Mazda CX-7 Sport. What do I need to know to tow a 14inch fishing boat trailer using a 1 7/8 ball?

For your 2010 Mazda CX-7 I recommend the Draw-Tite Max-Frame Trailer Hitch Receiver - Custom Fit - Class III - 2" Item # 75512. This hitch offers a 2" x 2" receiver tube opening. Having the 2" x 2" receiver tube opening rather than the 1-1/4" allows you to use the hitch for a lot of different accessories. With the 1-1/4" you would be limited to certain hitch mounted accessories. It also has a pre-welded bracket so when you install your wiring if you wanted to route it outside the vehicle it can be mounted instead of hanging loose.
As far as your wiring I recommend T-One Vehicle Wiring Harness with 4-Pole Flat Trailer Connector
Item # 118405. This wiring kit gives you all the proper lighting functions for your trailer. It has a converter box so if there is a wiring issue with the trailer and a short occurs it will not back feed to your vehicles factory wiring and cause any damage.
If you do not have a ball mount and ball I recommend Curt Fusion Ball Mount for 2" Hitches - 1-7/8" Ball - 2" Rise - 5,000 lbs Item # C45152. Since the hitch has a ground clearance of only 11-3/4", we recommend at least 13", this receiver can be turned over and the ball mounted with a 2" rise to give you the clearance needed.
As far as towing the trailer you just want to make sure the vehicle is capable of towing the weight of the trailer and what is loaded on it. I recommend checking your owners manual for the weight capacities and never exceed the vehicles recommendations.
If your boat trailer has a 5 pin connector I recommend the Curt Trailer Connector Adapter - 4-Way Flat to 5-Way Flat - Vehicle End Item # C57187
