It looks like the best fit for your 2017 Cadillac CTS-V is the Curt Trailer Hitch Receiver # C11900. It is a 1 1/4" Class I hitch, and it's a perfectly good hitch for carrying bikes.

Most of the best bike racks have integrated adapters or 1 1/4" versions anyways. One thing worth noting however, is that Class I hitches are not rated for more than 2 bikes. You did mention you're only carrying 2 bikes, so you're fine.

When you're ready to put a bike rack on your hitch, I have a couple of recommendations. The first is the Thule Helium 2 Bike Platform Rack # TH44VR. It's super lightweight (yet still sturdy!) and easy to install. It has its own adapter for 1 1/4" and 2" hitches. This is a more premium option, but I had the best experience with how effortless mounting, securing, and dismounting the bike is with this. It has wheel mounts which protect your carbon frame bikes as well as accommodate a variety of bikes.

Another option is the Thule T2 Classic Bike Platform Rack # TH9045. I like how this has a heavier weight capacity and it's great with mountain bikes and fat bikes.

Hello, I have a 2017 Cadillac CTSV and I am looking for a hitch that I can put a bike rack on for 2 bikes. not using the hitch to tow anything ever The best bike racks look like they use a 2inch hitch, but some have 1.25inch hitches. Do you have a hitch solution for me by any chance?

Between Thule Helium 2 Bike Platform Rack # TH44VR and Thule T2 Classic Bike Platform Rack # TH9045, the Thule Helium 2 Platform Rack is a little higher and shorter. It will depend on how low your sedan is to the ground so I attached a video measuring it on an Audi A6 which is another lower sitting car. This rack has a knob on the end as the last line of defense in case you forget it's there when you go up a steep hill or driveway. If ground clearance is an absolute priority, another option is a hanging bike rack. There's the Thule Helium Pro 2 # TH9042PRO which is the hanging style version of the recommended platform rack. I attached another video of it in action on a Cadillac SRX. A hanging rack like this would require a little more effort for mounting and dismounting bikes, but then you would not have to worry as much about ground clearance.
