Question:
I have a 2016 Toyota Highlander XLE and am towing a boat. The boat causes the rear end to sag and I am going to adjust the boat position, but I would also like to beef up the rear suspension. The Coil SumoSprings look like a product that will help. 1 Is that th e best for my application 2 It says the size is not verified for a 2016 Highlander but I see reviews that say it works well. What size should I get.

Adjusting the tongue weight of your trailer is definitely the first step to take in leveling out your towing rig and promoting a safe towing experience. You'll want to shoot for 10-15% of the loaded weight of your trailer to be tongue weight. If you don't already have one I recommend using a tongue weight scale like part # e99044 to know what your tongue weight is any time you need to load the trailer up.
If you still have sag after getting the correct tongue weight then adding a suspension enhancement like the Coil SumoSprings is a great option. There are no suspension enhancement options for a 2016 Toyota Highlander, but if you can get me some measurements of the coil springs on your Highlander I can see what will work for you. Attached is a photo showing what measurements I'll need.
Typically we recommend using a weight distribution (WD) system for battling vehicle sag as it usually does better than suspension enhancement. For your application you'll need a Pole Tongue Adapter # RP3280 and then a system that uses brackets instead of chains like the Reese Steadi-Flex # RP66558. If you go this route don't forget to pick up a hitch ball as well. For a 2" use # 63845 and for a 2-5/16" use # 63847.
