Could the metal shroud be easily taken off to use this for a truck bed installation up under the bed rails?

The metal shroud of the Interior LED Utility Strip Light # ILL38CB that you referenced is held on with four screws on the back of the assembly. You'd easily be able to remove it if you wanted to.
