From what I am able to find, it appears that the 2015 Ford Escape 2.0 Ecoboost engine has a towing capacity of 3500-lbs; so you'll be able to tow any boat and trailer combo under that total weight. We always recommend confirming that with your owners manual, but you can also check with your local Ford dealer for confirmation of what your vehicle is capable of.
Since you need a hitch in order to tow a boat with your vehicle, I recommend going with the Draw-Tite # 75782 since it is the only hitch that will not interfere with the hands-free liftgate option that comes on the Escape. This hitch has a black powder coated finish that offers great rust protection to make sure that it lasts as long as your vehicle does.
There are also a couple of other parts you'll need to tow a boat trailer- wiring, ball mount and hitch ball. For wiring, I recommend going with the Tekonsha # 118566, which provides you with an easily installed 4 way connector to connect to your trailer and provides lights. To finish out your towing setup, I recommend going with the etrailer # 989900 which has a ball mount and hitch balls to cover a variety of towing needs. This kit has a ball mount that can be used as a rise or drop, hitch pins, carrying bag and both a 1-7/8" and 2" hitch balls.
I've attached the installation videos of the hitch and wiring as well as a review video of the ball mount kit to help you out if you decide you want to install these yourself.
