Is the only need for an electrical aspect to power the oven light? Otherwise could it be used without any electricity?

You are correct. The Furrion 2-in-1 Range Ovens, like # FSRE21SABL require 12V power just for the interior oven light and the LEDs on the control knobs. The oven itself, including the igniter, is powered solely by propane. You could choose not to hook up the oven to electric and simply not have any lights but have fully cooked and ready to eat food!
