Question:
Have the HD trailer setup with 2inch x 2inch hitch that is about 21inch from the ground to the top of hitch box. Will be towing a pontoon boat and trailer weighing about 5000-5500 lbs max am told top of boat trailer hitch is about 24. Also a Seadoo double trailer where we were told that a 2inch is what is needed. Both have 2inch balls, looks like I will need about a 3inch rise for boat and 2inch for Seadoo trailer. What should I buy? Will I need 2 mounts?

You have a couple of options. First, you can buy two ball mounts, one with the correct rise for the pontoon boat and one for the Seadoo trailer. Or, you can get one ball mount that use a 2-1/2 inch rise, # AMSC2HD, and that would be fine for both trailers.
If you wanted to go with separate ball mounts, for a 3 inch, use # 40331. You do not have to use that extra sway control bracket welded to it.
Another option is to use an adjustable ball mount like # TK5007. It has a max rise of 9 inches or max drop of 10 inches. I have included a link to a video review for you.
This ball mount requires a ball with 1 inch diameter shank like # 40038.
Once you have both trailers and the truck available, there are some measurements you can take to determine the rise/drop you will need in a ball mount. I have included a link to an FAQ article that will help you.
