How easy is it to put on and take off this piece? I typically carry just one bike and I would like the option of carrying two, but I do not want to spend an hour putting it together and taking it apart.

I have the perfect option for you, but to address your specific question the Kuat Transfer 1 Bike Add-On, # TSAOB, should not take you an hour to install, but it certainly wasn't designed for easy on/off use. There are a total of 7 allen head bolts and 2 spacers that hold the add-on to the main rack. The add-on comes with the necessary allen wrenches and all of the hardware, so you won't need anything else.
If you are looking for a single bike rack with the easiest to install 2nd bike add-on, I strongly recommend the the Rocky Mounts Monorail Solo Single Bike Rack, # RKY10007, along with their 1 bike add-on, # RKY10005. The add-on simply slides into the end of the bike rack and is held in place with a single bolt. The add-on can be installed and removed in seconds.
