You could use a dimmer switch with the The Gustafson RV LED Ceiling Light # 277-000330-331 that you referenced but you'll need to use a dimmer switch designed for LED lights. Also this uses non-standard LED style bulbs that would be difficult to replace, but the good news is that LED bulbs essentially last a lifetime unlike incandescents that have a tendency to burn out every few months so you wouldn't really need to worry about ever replacing them.
