How does this mount if my RV bathroom doesnt have a stud behind the paneling?

The Stromberg Carlson Extend-A-Shower RV Shower Curtain Rod # EXT-3542S weighs under 3-lbs and even with the small additional weight of the shower curtain itself should be fine for installation in your shower even if a wall stud or other structural member is not available at the mounting point.
It would obviously be better to have such a mounting point to install just about anything on an RV but the included 2-inch stainless steel mounting screws will work for most applications. I would also use some silicone caulk/adhesive such as # LT37464 (or the clear pure silicone caulk you can find at any hardware store) to both seal out water from the mounting points and also to help distribute the weight of the rod across a larger area on your shower.
