How do you unhook a Reese above bed gooseneck trailer hitch?

If you are speaking of the Reese Elite Series Above Bed Gooseneck part # RP30845, removal is pretty simple.
Remove the locking pin from the anchor handle on each side of the gooseneck hitch. Then, rotate each locking handle to its unlocked position, which would be perpendicular to the hitch itself. Lift one end of the hitch out of the mounts, and then repeat for the other side. Sometimes the locking handles will need to be jiggled a bit to align the anchors with the opening in the mounting puck.
