Question:
I have a 1 1/4 hitch on my 2011 Mazda CX 7. I am planning to buy a 2017 Mazda CX 5. Will it work to take the hitch from the CX 7 and use it on the CX 5? If so, I would probably need new mounting kit, right?

You are correct that you need new hardware when re-installing a trailer hitch. When comparing the trailer hitches it looks like one from a 2011 Mazda CX-7 will not fit your 2017 Mazda CX-5.
I recommend going with the Draw-Tite Max-Frame Trailer Hitch Receiver # 76138 as a replacement. This is a Class III trailer hitch with a 2" receiver. The 2" receiver gives you more accessory options than a 1-1/4" receiver would.
This trailer hitch has a max trailer weight rating of 4,500 lbs and a max tongue weight rating of 675 lbs but you need to check your owner's manual to see what your CX-5 is rated for and then stick with the lower of the ratings as that is your limiting factor.
