The Better Bath # LC209351 Square Galley/Kitchen Sink that you referenced has a drain hole that is 1-1/2" in diameter on the inside of the lip. The outside diameter of the lip is the standard 2" which was confirmed by my contact at Lippert.

This will work with a Pop Up Drain Assembly like part # PF182001.

If we install two faucets on a trough sink, how do we control the drain?

If you have just a single drain you should still be able to use a standard stopper/plug that would be located in the center of the trough.
