The thing about flat bed trucks is that they have a much taller bed than a standard truck bed so you end up having to go with a hitch that sits a bit lower to compensate for that like the Demco Hijacker SL Series Flat Deck 5th Wheel Trailer Hitch # DM6076SL-FLAT.

A standard fifth wheel hitch like the Curt part # C16181 that you referenced will sit too tall and won't allow your trailer to sit level.

The other thing to consider is the length of the bed. Some flat bed trucks have beds that past the rear axle further than a standard bed which means the overhang of the trailer won't be long enough. An easy way to check this would be to measure the length of the bed. If it's longer than 8 feet you probably won't have the needed clearance.

You'll need a set of the SL rails like the part # DM8553004-12.
