The review for the Draw Tite hitch part # 36336 which is a confirmed fit for your 2005 Toyota Camry is several years old. It was from back in 2011 when this hitch was a Class I hitch. Now that it's a Class II hitch it will allow Class II bike racks to fully insert and install. Class I hitches have a weld stop in the tube that prevents a Class II only accessory from inserting. Now that is not the case.

That being said the Thule T2 Pro part # TH23JV that you referenced is a Class I compatible rack so either way it would fit and work well. This is a very nice bike rack that you'll be very happy with as well.

1-1/4 inches be design are no more likely to sway than a 2 inch. Basically with either hitch size the biggest factor in sway will be the quality of the rack. A lower quality/cheaper bike rack will have looser clearances and will much much more than a higher quality rack that was built with stability in mind. The T2 Pro you we talked about is rock solid though and would be a great option. 2 inch hitch adapters aren't ideal for a 1-1/4 inch hitch as they cut the capacity of the hitch by 50 percent and add quite a bit of movement to the hitch/rack setup.
