Getting the Drawtite 75758 for my 2017 escape. what wiring do I need?

The Draw-Tite Class III Max Frame Round Tube Receiver Hitch # 75758 referenced in your question is confirmed to fit your 2017 Ford Escape, as long as it does not have the factory Class II towing package. This Class III hitch will use existing holes in the vehicle's frame for a no-drill installation. I have attached an installation video on your Escape that you can use for reference.
Then for a trailer wiring harness, I recommend the Curt Vehicle Wiring Harness # C56320 if you do not have the factory tow package. This custom-fit harness will connect directly to built-in ports located behind the driver and passenger side tail lights. This will provide you with a 4-Way connector at the rear of the vehicle to connect with and power your trailer's signal lights. I have included the written installation instructions that you can take a look at.
To tow a trailer, you will also need a ball mount and hitch ball. I have attached great article that explains how to choose the best one for your setup, along with a link that will take you to our available selection.
