I'll never have to pull anything heavier than 2500 to 3000 lbs. My current 12 ft. aluminum boat and trailer can hardly weight more than 1500. So, if there would be a weight saving by getting a Draw-Tite hitch that is rated for something less than 5000 lbs, we might consider that.

There is actually a simple explanation, though your confusion is understandable. The reason you are seeing # C56332 is because the part number changed. The harness you referenced, C56151, is now # C56332.
Additionally, if you are going to be towing, I recommend checking out Ball Mount Kit # 989900, which may fulfill your towing needs in one tidy package; two ball mounts – one with a 3/4” rise or 2” drop and the other with a 2-3/4” rise or 4” drop, a 1-7/8” hitch ball, a 2” hitch ball and a pin and clip.
