I am looking for the best trailer hitch for a 2017 Subaru Outback - 6 cyl.

I suggest a 2-inch Class III hitch, one of the items shown on the linked page. Of all the options I suggest Draw-Tite # 75673 for its easier installation and high 600-lb tongue weight capacity.
Installation is shown in the linked video and the hitch comes with all required hardware. The written instructions are linked too and these give you a list of the tools needed.
