We have two Draw Tite gooseneck hitches that fit your 2000 Chevy C/K 3500 with an extended bed. The part # 9465-40 has a removable ball setup that you remove and reinsert upside down to store it.

The part # 8339-4440 flips up when needed and folds down when not needed. Having used this style of hitch before I don't prefer them as they typically get hard to use over time. I prefer the first hitch style.
