We can help you with the process of converting your 5th wheel from drum to disc brake operation. The process is outlined in the linked article which gives you all of the considerations to keep in mind and all the items needed.
Some brake controllers, including many factory-installed units, do not work well with electric-over-hydraulic (EOH) trailer brake actuators. It can be possible to wire in an adapter to allow for correct operation but the simpler and more reliable option is to replace the factory unit with a quality aftermarket brake controller such as the Prodigy P2 # 90885, which is a reliable and popular controller that is easy to set up and use. Installation of a controller like this is outlined in the other linked article.
You can see disc brake kits and disc brake actuators on the linked pages. You will need a new actuator like # HBA16 that can deliver the higher pressure required by disc brakes. Brake kits are offered in many types of finish (at various price ranges) including stainless steel kits like # K2R79S.
