I have an 05 chef Equinox and have your rack with the adapter. Should I have stiffer springs installed on my Equinox?

The solution you would want for your 2005 Chevy Equinox would be to go with a Class III hitch like the part # 13591 instead of the Class II hitch you have now that has a 1-1/4 inch opening. This will allow you to now have to use the hitch adapter part # 80303 that you mentioned which will put less leverage on the rear of your vehicle.
If for some reason you still did experience sag the rear air bag kit part # AL60727 would give you additional rear suspension support to level the vehicle out.
