Why Would an Edge Product Installed on a Truck Not Have Power Level Adjustments

I purchased a 2008 f250 with the edge product an dont know how to use it but it also has no power level option on it what can I do ? An does it need to be updated somehow

Since you said you couldn't find a power level option on the Edge programmer you have on your 2008 Ford F-250 there is a great chance you actually have an Insight Monitor like part # EP84030. This product only allows you to look at various engine parameters and has no programming capabilities.
If your truck is a diesel you would want the part # EP96TR for a programmer/monitor.
