First let's start with a roof rack for your 2011 GMC Sierra Crew Cab. For that you will want the Rhino Rack roof rack that consists of part numbers # RRVA137B-2, # RRRLKVA, and # DK227.

Then for a J-style kayak carrier the Thule Hull-a-Port part # TH834 would work great. I attached a review video that shows this carrier being used on a 2011 GMC Sierra like yours.
