Can I fit 2 sets of gull wing kayak racks on a 2019 Honda Odyssey with factory installed roo rails and cross bars. Kayaks 34inch wide x10foot long Sundophins Arubas.

In order to carry two kayaks on a 2019 Honda Odyssey with factory roof rack you'll indeed need to do so on their side with j-style cradles like the etrailer Kayak Roof Rack part # e98878. There should be no issue fitting both of these on the same crossbar since you can adjust the pitch of the upright or offset the carrier. The carriers can also be installed so that the kayaks are back to back or back to front for more room. These are complete kits which come with everything you need to secure the kayaks down to the tie-downs.
