How do I power a mini fridge 600w , box fan 47w, led lights 30w, without using a generator or my van battery or solar power on the roof?

I recommend using a power inverter like the Power Inverter 1000 Watts with Three AC Receptacles # WC3720. What this will do is allow you to use your vehicle's electricity to use household appliances like the mini fridge, the box fan, and the LED lights you referenced.

Realistically, you're going to need a sizeable battery bank to power all your electronics and run them on demand. My suggestion is to calculate how much energy is used in a day. Once calculated, follow the chart linked on this answer page and choose a solar kit. I understand you don't want to use solar, but it is going to be more cost affective, and much simpler then buying a bunch of batteries and building a battery bank, which, the weight of the combined batteries may overload your vehicle's capacity.

Not to mention you'd have no real way of charging all those batteries if you're using your alternator.

Your transfer switch can still be used since it's just selecting the power source that's going to run to the Progressive Dynamics #PD4135K. If you ever have issues with it later on you can replace it with Progressive Dynamics #PD5110010Q.
