Both the Yakima QuickBack 3 and the Thule OutWay 3 are great products, and are both considered a fit for a 2011 Ford Escape, however my recommendation would be the Thule OutWay 3 # TH56BV.
The Thule OutWay 3 has had excellent reviews and it is versatile and compatible with a wide range of vehicles, so if your looking to use it on a different vehicle at a later time this would be a great option. However some vehicles spoilers do interfere with the mounting cables on the Thule OutWay 3, so please check compatibility with the next vehicle that this is anticipated to be used on.
Thules FitDial cable systems is what mount the bike rack to your vehicle, and is easier for installation and removal as opposed to cinch style straps that Yakima offers. The Thule option also offers a locking cable to secure the bikes to the rack. Additionally, the rack can be locked to the vehicle using the Thule One Key system.
Depending on the vehicles weight capacity of the rear trunk the Thule OutWay 3 offers a weight capacity of up to 99 pounds as opposed to the 90 pounds that the Yakima Quick Back 3.
If you plan to carry an alternative frame, women's or children's bike, Thule suggests using an Adapter Bar such as the # TH982XT. This allows these bikes to be mounted in a horizontal position that improves ground clearance.
Please also note that for the Yakima QuickBack 3 includes glass hatch hooks for installing the unit on vehicles with glass hatchbacks, gate mounts and on other hard-to-fit vehicles, and this limits the carrying capacity from 3 to 2 bikes.
I have provided links to the products listed above as well as some videos for your reference.
