The Curt Class III hitch you'd looked at, part # C13207 has a tongue weight capacity of 750 lbs. This means that the hitch receiver tube can safely withstand up to 750 lbs of downward force being applied to it. The hitch will fit a 2017 Ram ProMaster 3500 as long as it isn't the extended wheelbase model. As long as the bike and its carrier weigh less than 750 lbs, this hitch would work perfectly for you.
If you don't already have a motorcycle carrier in mind, we offer a nice one as part # e98873. The carrier can handle bikes weighing up to 500 lbs with tires up to 4-7/8 inches wide, and features an integrated ramp which makes loading the bike easier. We also offer a tie-down kit as part # SS6-SL14.
I've linked to an install video for the hitch I recommended, as well as to demonstration videos for the motorcycle carrier and the tie-down kit.
