Deep drop bumpers are about 10 inches tall. It looks like in the picture you have submitted the vehicle already has one. The one hitch for your 1987 Chevy Blazer # 75129 is designed so that the receiver fits right under the stock bumper. It would not work with a deep drop bumper. So what I recommend is a weld-on hitch, # 41990-16, because the tall brackets will allow you to mount the hitch lower to compensate for the bumper. I recommend having a professional welder perform the installation.

To add a 4-Way flat trailer connector you can use # 118312. Since your vehicle is basically ready to take on Gravedigger you will likely need a ball mount with a substantial amount of drop to tow anything level. The fixed ball mount with the most amount of drop we have is # AMSC12 with 12 inches of drop measured from the top of the shank to the top of the ball platform.

The adjustable ball mount with the most drop is # 325-GH-1526 at 21 inches. I have linked videos of both ball mounts for you.

If you are looking for a deep drop bumper for the Blazer you will likely have to find one that was designed for a full size pickup of the same generation and modify it to fit on the Blazer. The other option is to have one custom fabricated but the cost of that will likely be substantial.
