Most grease caps are very similar in height, so changing the cap most likely won't solve the clearance issue.   Not having a cotter pin is not acceptable but because it is an EZ-Lube hub it should use the Spindle Nut Kit for EZ Lube Axles part # RG05-100. This has the tang retaining washer to keep the nut from backing off. As far as the grease zerk they are threaded.
