The differences that you noted between the Draw-Tite trailer hitches # 75876 and # 76182 for your 2018 Subaru Forester are spot on. Both are custom hitches so no drilling is required (although you may need to enlarge some access holes) and they both are Class III trailer hitches with a 2" receiver.
The cost of the # 75876 is lower because the hitch is less intricate which results in the easier installation as well. The cost of the # 76182 is higher because it is specially designed to give you a really clean look with only the receiver showing. This affects the installation and makes it a bit more involved.
If you are comfortable working on a vehicle then you should be able to install either trailer hitch on your own but if you aren't very comfortable working on vehicles then I recommend having the trailer hitch # 76182 installed by a professional if you decide to go that route. I have linked installation videos for both trailer hitches so you can see what the process looks like.
Let me know what you will be using the trailer hitch for and I can make additional recommendations if necessary.
