What is spacing of mounting holes from center to center? Also, the max capacity of my trailer is 2,900 Lbs. is there any advantage to purchasing a 5000 or 6000 lb.coupler over this 3.500 lb. model?

The mounting holes, center to center, on the sides and the top, are 3 inches. One advantage of a higher capacity coupler is that if you ever need or want to use it with something heavier than your current trailer, you will have it available. But the 3,500 pound capacity is certainly enough for your 2,900 pound capacity trailer.
