do they make a stainless steel hitch ball and nut for a pintle hitch with a 1-1/4 inch shank

I am sorry, none of the pintle hitch balls we offer are constructed of stainless steel, they are all chrome plated steel.

We do offer some combo kits that offer the pintle, with stainless steel sleeve and interchangeable balls like part # PH2S which would slide into a 2 inch receiver or part # PH4 which can be used in conjunction with the cushioned weight distribution shank, part # AMAC1.
