On the 2011 GMC Sierra, there is a tow package wiring bundle under the dash so you will not use a plug int type of wiring harness. What you can use is # HM47685. One end plugs into the brake controller and the other end has blunt cut wires that you will need to splice into the tow package wiring.
The tow package wiring is four or five blunt-cut wires under the left side of the instrument panel. These wires are located above your left shin as you are seated in the drivers seat. The wires can be identified by a white label and the color of the wires.
The white label should have the functions on them. The red/black GM wire goes to brake controller black. The white wires go together. The light blue with white goes to to brake controller red wire. And the dark blue on the truck goes to the brake controller blue. If there is an orange wire, do not use it. I have included a link to an FAQ that should help.
