Since maximum water resistance is you primary concern, we can rule out the Safari Header Bikini, # B5258135.
A bikini top is meant for temporary use and is not designed to exclude rain from the interior of the vehicle.

No Jeep soft top (even the OEM ones) are completely waterproof. If rain or snow is allowed to puddle on the roof for long enough, it will eventually work its way through.

Of the other two tops you mention, the Trektop # B5680535 and the Trektop NX # B5682335, I would recommend the NX model, because by removing the rear door and windows, it will provide the same coverage as the bikini, like having two tops for one price. The only drawback to the Trektop is that the angled rear will mean losing a bit of covered storage space. Both tops offer the identical level of weather resistance.
